just remembered a few things I wanted to show you...

I'm growing tomatoes. Did I tell you that already? Well, I am... and they are actually growing. Like, if you actually water the plant it will like totally grow. Brilliant, right?! haha! I'm also growing zucchini and crook neck squash but don't have photos of those yet. So here is my tomatoes...


Also.. here is one of my new little treasures that I found at a second-hand shop in Idaho... isn't it so cute?!

zucchini bread/muffins

Last week we had the chance to spend some time with our dear friends in Idaho. Here is a recipe that Siska shared with me and I just tried it today- its SO yummy!

Zucchini Bread/Muffins

By: Siska Reece
adapted by: ME!

Beat:
3 eggs
1 3/4 cup rapadura
1 cup coconut oil

Add and Stir:
2 cups whole wheat flour
2 tsp vanilla
2 tsp baking soda
2 tsp cinnamon
1/4 tsp baking powder
1 tsp salt

Finally, mix in 2 cups grated zucchini, drained of juices. Pour batter into 2 greased loaf pans or 24 muffin tins. Bake at 350 for 1 hour (for bread) or 30(+or-) for muffins.

first time

Just had to show this picture off... this is a picture of history, my friends! This is a photo of Dave's first time changing a diaper! :-) And He did a splendid job- better than me because the day before I changed the kids diaper and put it on backwards! In my defense I will say this: I hadn't changed a diaper in roughly 16 years! :-)

We are getting ready for a trip. Today was a laundry day for me. There is something about hanging wet clothes on a clothesline to dry that just makes my heart go pitter patter. Maybe because its old fashioned... maybe its the way the clothes smell like sunshine afterward... I'm not sure exactly, but I like it.

blueberry crisp
adapted from martha stewart's recipe


for the filling;
6 cups (3 pints) blueberries
1/2 cup rapadura
1 tablespoon arrowroot powder (or cornstarch)
1 teaspoon fresh lemon juice
1/4 teaspoon course salt

for the topping;
3/4 cups whole wheat flour
1/2 cup old fashioned rolled oats (or chopped nuts such as almonds)
1/2 teaspoon baking powder
1/2 teaspoon coarse salt
6 tablespoons butter, softened
1/3 cup rapadura

method;
1. preheat oven to 375 degrees. Make the filling: mix blueberries, rapadura, arrowroot powder, lemon juice and salt in a bowl. Transfer to an 8-inch square baking dish.
2. make topping: stire together flour, oats, baking powder, and salt. Cream butter and rapadura in a mixer until pale and fluffy. Stir dry ingredients into butter. Using your hands, squeeze topping pieces together in clumps.
3. sprinkle topping evenly over filling. Bake until bubbling in center and brown on top, about 1 hour. Transfer to a wire rack and let cool for 30 minutes before serving.

Today was a baking day- the best kind of day. 2 sandwich loaves, 3 rustic artisan french loaves, and 1 amazingly awesome pizza. It was a good day!
