Wish I had been at the Bowman birthday party to try this. WIll have to make it here instead! I also saw on Pioneer Woman's site a great pasta dish using eggplant...which I just about have ripe in the garden. I love Pioneer Woman (and so does my mother-in-law now, too! Heehee.)
